Ingredients
- Flour 300g
- Salt Appropriate amount
- Eggs 2
- Onion Appropriate amount
- Ginger A piece
- Meat 200g
- Cooking wine 1 spoon
- Oyster sauce 1 spoon
- Sesame oil 1 small spoon
- Pepper Appropriate amount
- Light soy sauce Appropriate amount

- Seaweed A little
- Pepper and sesame oil A little
- Vinegar A little
- Chili sauce 1 spoon
Steps
1. Add salt to the flour, beat the eggs into a basin, and mix well
2. Knead into dough, cover and keep fresh for half an hour (if the dough is dry, add a little less and knead together)
3. Cut the green onion into sections, shred the ginger, pour boiling water into it, and make green onion and ginger water for later use
4. Cut the meat into cubes and grind into mince in a meat grinder
5. Take the meat out and put it in a bowl, add a little salt, pepper, cooking wine, oyster sauce, sesame oil. Add onion and ginger water in small amounts and times, and stir in one direction
6. The meat filling is in this state after mixing
7. Place the rested dough on the chopping board, sprinkle some dry flour, and roll it out with a rolling pin
8. Roll up the rolled dough and press it slowly until the dough is about 0.5 mm thick. If you like it thicker, press it thicker
9. Organize and cut into small squares
10. Take a piece of skin and put it on the palm of your hand
11. Place the meat filling in the middle and fold the dough as shown
12. Overlap the left and right corners, stick them with some water, and wrap them as shown in the picture

14. Boil the water, put it in a copy after boiling, cook for about 1 minute and wait for all the copies of the hand to float.
15. Now let’s make the soup base. I don’t have any red chili oil at home, so I’ll try another flavor - hot and sour. Personally, I think it’s more delicious than the red oil one. Take a bowl and add a little salt, light soy sauce, pepper and sesame oil, vinegar, seaweed, and chopped green onion. Add a little MSG as needed
16. Add bone broth and mix thoroughly. If you don’t have bone soup, you can also boil the noodle soup.
17. Serve in a bowl with seasoning
18. Put the chili sauce (the recipe for the sauce has been posted, you can check it out), and sprinkle some chopped green onion
19. If you don’t like spicy food, just have clear soup! Just as delicious!
Tips
- Add a little salt when kneading the noodles to increase the texture, and the noodles should be slightly harder
- When cooking hand knives, use a wide amount of water. After the water boils, put it into the pot. Do not turn off the heat after the knives are cooked to avoid the skin becoming sticky
- Just adjust the taste according to your own taste!
