Tips: ① 2g of sugar can be added to promote fermentation. Ordinary high-activity yeast can be used without sugar or if the sugar is less than 15g. If the sugar is higher than 20g, it is recommended to use high-sugar-tolerant yeast. ② Flours have different water absorption properties. You can reserve about 10g of liquid for adjustment. The dough should be slightly sticky❗️ ③Eggs are about 55g in shell, preferably refrigerated. ④ Purple sweet potato can be replaced with an appropriate amount of purple sweet potato powder (about 5-10g). If you use steamed purple sweet potato to knead the dough, you need to be patient.Step 2
✅Steps: 1⃣️Mix all ingredients except purple sweet potato and taro paste and knead evenly. Divide into two equal portions, add steamed purple sweet potato to one portion and knead again. Method: Knead by hand (just stir well and form a ball); or use a kitchen machine (don’t pursue film formation) 2⃣️Fermentation Cover both pieces of dough with plastic wrap and let rise until you poke a hole with your finger and it doesn't shrink back. (The time required is shortened when the room temperature is high in summer) method: ① Ferment at room temperature in a warm place (about 1-2 hours) ② Oven/cook machine 38 degrees (about 40 minutes-1 hour) ③Refrigerate overnight (6-12 hours), take it out and let it warm slightly 3⃣️Make taro paste filling Steam the taro and purple sweet potato, press them into a puree, add an appropriate amount of milk and sugar (I used about 40g of milk and 20g of sugar) according to the degree of dryness and thinness, and mix well to form a thick filling and set aside.Step 3
4⃣️Molding After fermentation, take out two pieces of dough, press and deflate, roll into a rectangular shape (width is about the length of a toast box), spread a layer of taro paste, cover with another layer, pinch the four sides, cut into several long strips along one side and twist Together, roll it up from one end of the connector and put it into the mold. ✨Be careful not to use too much force when kneading the dough, but make sure the air is fully exhausted✨Step 4
5⃣️Fermentation Until the mold is eighty-nine minutes full (status: press lightly and slowly rebound) Method: oven at 38 degrees for about 1 hour (put a bowl of water to maintain humidity); or room temperature for about 2 hours (time is supplementary, status shall prevail) 6⃣️Bake Set the upper and lower racks of the oven to 170 degrees for 40 minutes (30 minutes for the low-sugar toast box).
