Step 1
Two pig's feet, the steel pig is burned red and all the pig hair is burned. Soak the pig's feet in water for 20 minutes. After soaking, use a brush to remove the burnt color. Finally, split the pig's feet in the middle and chop them into large pieces.Step 2
Peel off the bamboo shoots and wash them with water. Cut off the old parts of the washed bamboo shoots, leaving only the tender tips.Step 3
Appropriate amount of mung beans, wash and drain and set aside; appropriate amount of ginger slices and scallops.Step 4
Pour water into the pot and bring to a boil, add in the bamboo shoots and blanch them thoroughly, remove them and put them in cold water (this way the bamboo shoots will stay crispy no matter how long you simmer them). When the water boils, pour in the pig's feet and blanch them thoroughly. Take them out and put them in cold water to wash off the scum.Step 5
Put the pig's feet and bamboo shoots into the pot and add enough water. Do not add water halfway. Add ginger slices, scallops and mung beans, cover the pot, and heat over high heat until the water is about to boil, then turn to medium-low heat (when the water boils, it will not splash everywhere). Then beat off the foam, cover the pot and simmer on low heat for 2.5 hours (remember to stir during the process so as not to stick to the pot. Adding mung beans will make the soup thicker, and if it sticks to the pot, it will taste mushy and it will not taste good).Step 6
After 2.5 hours, add the wolfberry. There is salt in the scallops. Try to remove the salt. Add an appropriate amount of chicken essence. Sprinkle in the chopped green onion and turn off the heat. It is delicious.Step 7
