Northeast Fried Cake
Ingredients
- White Shark Glutinous Rice Flour 150g
- Corn oil 10g
- Sugar 20 grams
- Boiling water 140 grams
- Bean paste filling 120g
Steps
1. Prepare materials
2. Form the bean paste filling into small balls of 25 grams each and set aside
3. Use a small basin to add water and sugar.
4. Add corn oil.
5. Bring to a boil over high heat.
6. Pour the boiling water into the glutinous rice flour quickly.
7. Use chopsticks to stir into a fluffy consistency.
8. Wear disposable gloves and knead into a smooth, soft and delicate dough. (You can also apply oil on your hands to operate)
9. Shape into long strips and make the dough very soft, so it will not crack easily during frying.
10. Divide into six equal parts

12. Take a small dough and make a small nest in the middle
13. Add bean paste filling.
14. Use the tiger's mouth to close it, and the interface must be organized, otherwise the stuffing will be exposed when frying‼ ️The dough is very soft and easy to shrink.
15. Gently flatten again into a small cake about 1 cm thick
16. If the oil is 50% hot, use a chopstick to identify it. Fine bubbles will appear at the base of the chopstick

18. Put the fried cake embryos into 50% hot oil and place them one after another.
19. During the frying process, keep turning over to ensure that both sides of the cake are heated evenly. Otherwise, the side that cannot receive the heat will swell and crack.
20. Fry until both sides are golden brown and the fried cake is cooked when it floats on the oil surface. Remove and place on absorbent paper to absorb excess fat.
