Nourishing Braised Pork Trotters
Ingredients
- Pig's trotters 2 pieces
- Anise Appropriate amount
- Fragrant leaves Appropriate amount
- Cinnamon Appropriate amount
- Onions, ginger and garlic Appropriate amount
- Cooking wine A spoonful
- Light soy sauce 2 spoons
- Dark soy sauce 1 spoon
- Rock sugar Appropriate amount
- Dried chili Appropriate amount
Steps
1. Prepare the ingredients, slice the garlic and ginger, and cut the green onions into sections. The green onions can be shredded to make green onion knots, which will not fall apart easily when stuffy.
2. Boil water in a pot until 80% of the water is boiled. Then blanch the pig's trotters to remove the blood.
3. Pick up after 2-3 minutes.
4. Heat the pan, heat the pan, add 3/3 heat of oil, add onion, ginger, garlic, star anise and other ingredients, stir-fry until fragrant. (Because I wanted to braise pig's trotters, I used a cast iron stew pot, which conducts heat well and the time can be shorter.)
5. Saute until fragrant, then remove and keep the oil in the pot for further use.
6. Add the yellow rock sugar, melt the rock sugar into a sticky consistency, and add the pig's trotters. (The amount of brown sugar depends on personal taste. If you don’t like it too sweet, reduce the amount)
7. Add the pork trotters and stir-fry until browned.
8. Add the freshly oiled onion, ginger, garlic, star anise and other ingredients, and continue to stir-fry.
9. Add cooking wine.
10. Add light soy sauce and dark soy sauce and stir-fry.
11. Stir-fry until evenly colored, then heat water to cover the pig's trotters.
12. Add the green onion knots, wait for the pot to boil and simmer over low heat.
13. After about 40 minutes, check the stew and taste it. If it is bland, add some soy sauce without salt.
14. Pay attention in the middle, and finally remove the juice from the fire and pour it out.
15. Sprinkle sesame seeds for decoration, the aroma is overflowing
