Steps
1. Main ingredients: fresh shrimp.
2. Peel the fresh shrimps and pick out the shrimp threads.
3. Use paper napkins to absorb the moisture from the shrimps.
4. Add a pinch of white pepper.
5. Add a pinch of salt.
6. Put 1 spoon of cooking wine.
7. Add 1 tablespoon of starch.
8. Crush them evenly and marinate for 5 minutes.
9. Heat the pot over high heat. Add about 500g of oil. When the oil temperature is 50 to 60% hot, add the shrimp.
10. Gently slide the shrimp with chopsticks.
11. When the shrimp changes color from transparent to pink, reduce the heat to low and remove the shrimp.
12. Drain the shrimps and set aside.
13. Leave a little base oil in the pot. When the oil temperature is 30% hot, add onion, ginger and garlic until fragrant.
14. Then take out the onions, ginger and garlic, discard them, and keep the base oil for later use.
15. Add fried shrimps.
16. Add 1 tablespoon of cooking wine along the edge of the pot and stir-fry evenly.
17. Add appropriate amount of salt to taste.
18. Pour in an appropriate amount of water starch to thicken the gravy and stir-fry evenly.
