The fermented dough is twice as big as the original. Poke it with your finger. If the entrance of the finger hole is smooth and the dough in the hole does not rebound, it means it is fermented for the first time. After the first fermentation is completed, press the dough repeatedly with your fist to expel the gas, then take the dough out and knead it on the chopping board for a few times, then let it rest for about 15 minutes to let the dough relax so that the yeast can work again, and then Divide the dough evenly into the number of pizzas you want to prepare, mine is the amount of a 10-inch pizza, then knead the dough smooth, place it in a basin, and cover the dough with a lid. Carry out the second fermentation, which will take about 30 minutes, and it will be half fermented!Step 5
After the fermentation is completed, use your fists to repeatedly knead the dough to deflate it, and then let it sit for about 15 minutes to let the dough relax. If you do not let the dough relax and roll it directly, the bread will not shrink much. Put the kneaded dough in the pizza pan, and use your fingers to slowly press down and push out in the middle. Don't make the bottom of the pie too thin, and the thickness should be even. Otherwise, the bottom will easily dry out and become mushy when baking, while the sides will be dry. Not baked yet. (I use a French bakery non-stick pizza pan, so I put the dough directly and press the crust. If the pizza pan is not non-stick, brush a layer of cooking oil into the pan to prevent the pizza pan from sticking!)Step 6

Place the pizza pan on the grill in the microwave oven, press the "Steam Egg" button, and set it to exactly 150 degrees for 12 minutes.
