Seaweed and shrimp skin soup
Ingredients
- Seaweed 8g
- Shopee 20g
- Eggs 2
- Pepper A little
- Starch 1-2 spoons
- Carrot A little
- Onion and ginger A little
Steps
1. Prepare the required ingredients.
2. Cut the shallot into chopped green onion, cut the ginger into minced ginger, and cut the carrot into fine dices.
3. Rinse the shrimp skin with clean water, squeeze out the water and set aside.
4. Soak the seaweed and wash it several times, control the water and set aside.
5. Put 1-2 tablespoons of starch in a small bowl, add water and mix to form water starch and set aside.
6. Heat oil in a pot, add chopped green onion and dried shrimps and stir-fry until fragrant. Fry the dried shrimps in oil first to make the soup more fragrant and less fishy.
7. Add appropriate amount of hot water and bring to boil.
8. Add washed seaweed.
9. Add a little salt according to personal taste. There is already salt in the shrimp skin, so be careful not to add too much salt.
10. Add a little pepper.
11. Add a little light soy sauce.
12. Add the water starch prepared in advance. The water starch should be added in batches. Do not pour it into the pot all at once to prevent the soup from being too thick.
13. Crack two eggs into a bowl and beat them with chopsticks.
14. While stirring the soup in the pot, slowly pour in the egg liquid to form egg droplets.
15. Finally add carrots and green onions.

Tips
- Add the water starch in batches, do not pour it into the pot all at once to prevent the soup from being too thick.
