Secret Chicken Feet
Ingredients
- Chicken feet 600g
- Fragrant leaves 2 grams
- Cinnamon 2 grams
- Ginger 5 grams
- Chili 4g
- Zanthoxylum bungeanum 3 grams
- Rock sugar 10g
- Light soy sauce 6 grams
- Cooking wine 5 grams
- Anise 4 pcs
- Salt Appropriate amount
- Water Appropriate amount
Steps
1. Prepare ingredients; slice ginger, cut chili into diagonal sections, star anise, bay leaves, cinnamon, rock sugar, and Sichuan peppercorns and set aside.
2. Remove the nails from the chicken feet and wash them.
3. Put water in the pot, blanch the chicken feet and remove excess blood.
4. After blanch, remove and drain.
5. Prepare a pot, add water and blanched chicken feet.
6. Pour in an appropriate amount of cooking wine to remove the fishy smell.
7. Add sliced ginger.
8. Add a little light soy sauce to enhance the flavor.
9. Add a few star anise.

11. Add bay leaves and cinnamon bark.
12. Add appropriate amount of peppercorns.
13. Add appropriate amount of rock sugar
14. Bring to a boil over high heat, turn to medium to low heat and simmer for 40 minutes.
15. Finally, add salt to taste and turn up the heat to reduce the juice.
