Spicy Stir-fried Beef Tripe
Ingredients
- Cooked tripe 1 catty
- Dried chili 20g
- Peppercorns 10g
- Garlic 4 cloves
- Ginger slices 2 slices
- Salt 1.5 tsp
- Light soy sauce 3 spoons
- Oyster sauce 1 spoon
- White sugar 1.5 tsp
Steps
1. Cut the cooked tripe into small strips and set aside
2. Slice garlic
3. Cut the ginger slices into shreds
4. Cut the dried chilies into thin strips and remove the seeds. Pick off the branches of Sichuan peppercorns
5. Make a sauce first, add light soy sauce, oyster sauce, and sugar to the bowl and mix well
6. Add a little more vegetable oil to the pot
7. After the oil is hot, add shredded ginger and garlic and sauté until fragrant
8. Add tripe and stir-fry
9. Add salt to taste, not too much salt here, just a little bit of base
10. Stir-fry until the edges of the tripe are slightly charred and brown
11. Add dried chili pepper and Sichuan peppercorns and turn to low heat
12. Stir-fry until the chili shreds become crispy and the pepper flavor comes out
13. Pour on the sauce The spicy flavor will be released as soon as the sauce is poured on it
