Steps
1. Wash the chicken breast, remove the fascia and chop into puree.
2. Add minced ginger and chop evenly.
3. Peel off the shells of the green shrimps, remove the shrimp threads and mince them with the chicken breasts into a puree (adding shrimps can make the meatballs more elastic).
4. Add grated carrots.
5. Chop evenly.
6. Add a spoonful of cooking wine to the chicken breast and shrimp paste.
7. Add appropriate amount of salt and chicken essence and mix well.
8. Take an appropriate amount of chicken breast and shrimp paste and shape into balls. (It is convenient to dip your hands in water before rolling the meatballs, and the meat paste will not stick to your hands)
9. Put the rolled meatballs into a plate, put them in a pot and steam them over water. After boiling the pot, steam them for another 10 minutes.
10. Heat oil in a cold pan (a small amount of oil is enough) and add peanuts.
11. Stir-fry over low heat until peanuts are brown. Let cool and set aside.
12. Put the fried and cooled peanuts into a plastic bag and crush them with a rolling pin.
13. Remove the stems of garlic and cut into minced pieces.
14. Wash the coriander, mince the coriander stems, and keep the coriander leaves.
15. Use oyster sauce, very fresh soy sauce, balsamic vinegar, chicken essence, sugar, oil chili, minced garlic... to prepare a bowl of cold sauce. (Just adjust it completely according to personal taste)
16. Pour the prepared cold sauce on the steamed meatballs.
