A king eggplant grown in my own terrace vegetable garden.Step 2
Cut the eggplants and steam them for 12 minutes.Step 3
Mince ginger and garlic, and dice green and red pepper and coriander.Step 4
Prepare the sauce: two spoons of light soy sauce, one spoon of balsamic vinegar, appropriate amount of oyster sauce, appropriate amount of sugar, a little salt and appropriate amount of water starch.Step 5
After the eggplant is steamed, let it cool. Tear into thin strips by hand and spread on a plate.Step 6
Heat oil in a pan, add ginger, garlic and green and red pepper, sauté over low heat until fragrant.Step 7
Pour in the previously prepared sauce and bring to a boil.Step 8
Pour the cooked sauce over the shredded eggplant, garnish with a few cilantro, and you're done!Step 9
