Stir-fried razor clams
Ingredients
- Razor clam 500g
- Ginger 10g
- Garlic 10g
- Green pepper 15g
- Millet pepper 10g
- Green onions 15 grams
- Onion 15g
- Cilantro 5 grams
- Water 50 grams
Steps
1. First, soak the purchased razor clams in salt water for two hours, let them spit out the sediment, and then rinse them with running water.
2. Slice the onion and ginger, flatten and chop the garlic, and cut the green and red pepper into shreds and set aside.
3. Cut the onion into shreds and set aside.
4. Boil water in a pot, add razor clams, scald slightly and take them out.
5. Heat the oil pan, add onions, ginger, garlic, green and red peppers and onions and stir-fry for a while.
6. Then add a tablespoon of bean paste and stir-fry evenly. Add an appropriate amount of water.
7. Finally add the blanched razor clams.
8. Stir-fry over high heat for a while and then remove from the pot.
9. After serving, garnish with coriander leaves and stir-fry the razor clams.

Tips
- 1. Doubanjiang itself is salty, so there is no need to add salt.
- 2. During the soaking process, a few drops of oil can be added to the razor clams to facilitate spitting out sand.
- 3. The razor clams must be cleaned to avoid unpleasant taste.
