Stir-fried shredded potatoes
Ingredients

Steps

2. Wash and peel two potatoes, then cut into thin strips;
3. Rinse the cut potato shreds several times in clean water, then soak for a short while, then remove and drain;
4. Prepare minced garlic, minced ginger and chopped green onion; set aside;
5. Take an appropriate amount of Sichuan peppercorns and dry spicy red pepper segments and soak them in water; (this will prevent them from turning black)
6. Pour an appropriate amount of oil into the pot. When it is 60 to 70% hot, pour in the shredded potatoes and start frying. Use chopsticks to stir them during the process. (If the amount is large, you can fry it in multiple times. I divided it into two. Second fried)
7. When fried until golden and firm, remove and control oil; (because potatoes contain water, the frying time is a little longer)
8. Leave a little oil in the pot, add minced garlic, minced ginger, Sichuan peppercorns and dried red pepper segments and stir-fry until fragrant;
9. Pour in the fried shredded potatoes and stir-fry a few times;
10. Then add an appropriate amount of salt and pepper and a little sugar and stir-fry evenly. Finally, sprinkle with chopped green onion and stir-fry evenly;

Tips
- Be patient when frying shredded potatoes! Because the shredded potatoes contain water, the frying time is a little longer. When stir-frying at the end, quickly add the seasonings and stir-fry over high heat and it's done!
