Mince the onion and garlic. If your family doesn't like ginger, you can slice or shred it, in order to be able to pick it out at the end.Step 5
Heat the pan, add oil, add some chopped green onion, and stir-fry the minced meat. Add the remaining onion, ginger, and garlic in the middle, and stir-fry together until cooked.Step 6
Pour in the chopped cowpeas and stir-fry together. Because the cowpeas have been blanched, just stir them evenly here. The time does not matter.Step 7
Pour in the sauce, cover the pot, and reduce the sauce over high heat. Once you receive it, you'll find it's delicious and sticky. Here I added two tablespoons of starch and water to make water starch and added it, mainly to thicken it, and then turned off the heat. The marinade is complete.Step 8
Boil water in another pot, add some salt, add noodles and stir with a spoon to avoid sticking to the bottom of the pot. Cover and bring to a boil, add half a bowl of cold water, cover and bring to the boil again, turn off the heat and simmer. The noodles may still look a little uncooked at this time, but they are actually cooked and will be stronger.Step 9
Noodles as needed: pick up the pot, add cold or ice water, add marinade and stir evenly. There are three people in my family who eat noodles. One wants to eat wide noodles, one wants to eat thin noodles, and one wants to lose weight, so I cooked three kinds. Okay, it’s time to start! The spoon is just a measuring device, just use the same spoon to take the seasonings. I use the stainless steel spoon that is most commonly used at home.
2. For the seasonings, just use the ones commonly used at home. For the starch, I used corn starch, and for the sugar, I used the chrysanthemum rock sugar at home. You don't have to wait for it to melt when making sauce, it will melt as soon as it goes into the pot.
