Super elastic handmade taro balls
Ingredients
- Tapioca flour 340g
- Cornstarch A small amount
- Purple sweet potato (weight after peeling and cutting into pieces) 180 grams
- Red sweet potato 200g
- Taro 200g
- Powdered sugar 30g
Steps
1. Wash purple potatoes, sweet potatoes, and taro, peel and cut into pieces, wrap them in tin foil, and steam them in water. The tin foil is used to prevent excess moisture from entering during steaming. If not, it is not necessary. Add more powder later.
2. Purple sweet potato, 10 grams of powdered sugar, 80 grams of tapioca flour.
3. Mash it with a spoon, being careful not to burn it.
4. First add 10 grams of powdered sugar, mix well with a spoon, and then add 80 grams of tapioca flour little by little. Knead slowly into a smooth dough. Purple sweet potatoes tend to be dry. If it is difficult to handle, you can add a little more water or milk.
5. Red sweet potato, 10 grams of powdered sugar, 110 grams of tapioca flour.
6. Same as above, add powdered sugar first, add tapioca flour
7. Add tapioca flour little by little, and finally knead into a smooth dough.
8. Taro, 10 grams of powdered sugar, 150 grams of tapioca flour. The small taro I used has relatively high water content, so there is more tapioca flour.

11. Sprinkle some cornstarch on the chopping board and start cutting the taro balls.
12. Method 1: You can use a knife to shape it into a rectangle and then cut it. Suitable for dry and crumbly dough such as purple potato and sweet potato.
13. Method 2: Knead the dough into long strips and cut directly.
14. Sprinkle cornstarch on the cut taro balls when placing them to prevent them from sticking.
15. Boil the taro balls: After the water boils, add the taro balls. Cook until the taro balls float on the water, then cook for another minute and remove.
16. Put the removed taro balls directly into a basin of cold water, preferably ice water. Alternating hot and cold can increase the elasticity of taro balls.
17. How to eat: Add three or four pieces of brown sugar to a small amount of water and boil it into brown sugar water. Putting taro balls is the taro balls that are often eaten outside.

19. Method 2: Taro balls with coconut milk, really awesome. If you like dessert, you can add some condensed milk. I just put coconut milk in it and it's delicious.
20. At the end, here’s a little tip on cooking red beans: Soak the red beans in water overnight before cooking. When cooking, first bring to a boil, then turn to low heat and simmer for half an hour, then turn off the heat and simmer for 1 hour.
