Tomato Beef Cold Noodles
Ingredients

Steps
1. Wash the cherry tomatoes and make a cross on the butt with a knife
2. Make a pot of boiling water, add tomatoes and cook over high heat for about 10 seconds, remove and put in ice water. Remove from the ice water and peel off the tomato skin along the upturned skin.
3. Re-heat the pot, add sake, and boil over high heat until the alcohol evaporates completely and the smell of wine is no longer noticeable, then turn to low heat, add honey and salt, and stir until All melted. Add the cherry tomatoes and cook over low heat for 2 minutes
4. Pour everything into a container with a waterproof tape cover. When it is no longer hot, add apple cider vinegar and refrigerate overnight
5. Cook beef soup: Wash the beef tendon, put it into the pot whole, add water to cover the beef, bring to a boil over high heat, and cook for 5 minutes. Turn off the heat, take out the beef, and rinse with warm water to remove any foam. Return to the pot, add the washed beef and onions cut in half, add warm water just enough to cover the beef, bring to a boil over high heat, turn to low heat, cover the pot and simmer for about 2 hours. Use chopsticks to pierce the thickest part of the beef, and the beef is ready~
6. Remove the onions and discard them. Store the beef and soup in the refrigerator overnight.
7. The next day, take out the vinegar-pickled cherry tomatoes that have been refrigerated overnight, and separate the sweet and sour juice from the tomatoes for later use. Cut the cherry tomatoes in half and set aside. Take out and refrigerate the beef broth overnight. First remove the condensed fat on the surface of the beef soup, you can use oil-absorbing paper and a fine filter. Beef tendon slices. Mix the beef broth and the sweet and sour juice of cherry tomatoes. According to your own taste, add apple cider vinegar or honey to adjust the sweetness and sourness. If you like it more sour and sweet, add less beef broth. On the contrary, you can add more beef broth. If you feel it's not salty enough, you can add salt or soy sauce to taste.
8. Place the cooked noodles at the bottom of the bowl: 1) If you use Korean cold noodles, be sure to cook them according to the instructions. The important thing is to rinse them repeatedly with cold water after cooking, and then drain them. 2) If using konjac noodles, boil them in boiling water for 1 minute, remove and drain. Then make a hot pan, add konjac noodles, and stir-fry until the water is dry. It's more delicious this way. Xiaoqi chose konjac noodles.
9. Layer the sliced beef tendons and pour in the prepared cold noodle sauce

- Vinegar-pickled cherry tomatoes can be eaten directly as dessert!
