Vegetable Chicken Curry Baked Rice
Homemade Curry Sauce ~ | Onion 100g |
Tomatoes 120g | Apple 40g |
Milk 120g | Coconut milk 100g |
Curry powder 20g | Shacha sauce 2 tablespoons |
White sugar 1 tablespoon | Chili noodles 6ml |
Garlic powder 3ml | Ginger powder 2ml |
Chicken Essence 1 teaspoon | Baked rice ingredients ~ |
Rice 3 small bowls | Potato 1 |
Carrot 1 paragraph | Boneless chicken legs 1 |
Broccoli 80g | Mozzarella cheese 100g |
Step 1
Wash the chicken legs, cut into pieces, add an appropriate amount of cooking wine, white pepper, and salt, rub for a while, and marinate for preparation.Step 2
Make the curry paste. Remove the stems from the tomatoes, make shallow cross cuts at the bottom, blanch them in hot water for a while, and peel them. I used a large glass bowl that I tried out from IKEA. I have always loved this one. I have several of them at home. It has many uses. It can be used for washing vegetables, serving vegetables, and holding fruits. I like to use it to beat egg whites. You can basically judge the beating status of the egg whites by looking at the degree of adhesion between the protein paste and the wall of the bowl. It is very convenient~Step 3
Peel the tomatoes and cut them into cubes. Cut the onions and apples into small pieces. Put them into a food processor together with the milk and beat them into a paste. The finer the better.Step 4
Heat the pot, add 35g of butter, and heat over medium-low heat until the butter melts.Step 5
Pour in the curry powder and quickly stir-fry evenly.Step 6
After stir-frying evenly, pour in the fruit and vegetable milk paste and coconut milk, stir-fry evenly over medium heat, add all seasonings, and bring to a boil over medium heat.Step 7
Put a small amount of oil in the pot and stir-fry the chicken thighs until the surface changes color.Step 8
Cut potatoes and carrots into small pieces.Step 9
Pour the chicken thighs, potatoes and carrots into the curry sauce and simmer over low heat until the potatoes are soft. After the potatoes are cooked, if the curry sauce is still very thin, you can cook it over high heat until it thickens. Stir frequently during the stewing process to prevent the pot from sticking.Step 10
While the potatoes are stewing, tear the broccoli into small florets, wash them, boil a small pot of water, add a little salt after the water boils, add the broccoli, cook it and cover it with cold water, and set aside.Step 11
This time I used a 2-piece baking pan set from IKEA to make baked rice. It is made of ceramic and the outer layer is coated with matte glaze, which is very soft.Very fresh green.Step 12
This set of baking pans is one large and one small, with specifications of 31x21 cm and 23x15 cm respectively. The one in the picture is a big one, but the one used for making baked rice this time is a small one, just enough for a family of three.Step 13
Spread the rice in a baking dish and flatten slightly.Step 14
Place ¼ of the broccoli, then scoop out the stewed potatoes, carrots, and chicken in the curry, spread it flat on the rice, then place the remaining broccoli on top, and then pour the remaining curry sauce.Step 15
Spread a thick layer of mozzarella cheese. Preheat the oven to 230 degrees, turn the heat up and down, and bake for about 15 minutes, until the cheese melts and the surface is slightly colored. My oven temperature is low, you can bake it at a temperature of about 200 to 210 degrees. This baking pan is both microwave and oven safe, so you can also put it in the microwave for a few minutes. If you use a microwave, the cheese will be softer and easier to string.Step 16
Eat the baked rice while it’s hot~ I put 6ml of chili powder in the curry sauce, so it tastes very hot. If you can't eat spicy food, you can reduce the amount of chili powder to 2-3ml. IKEA's ceramic baking pan is well made and heats evenly, making the baked rice great~! The heat-insulating gloves in the picture are also IKEA's trial products. They are large and thick and have first-class heat insulation effect.Step 17
The curry paste you make yourself is not inferior to the curry cubes in taste. It is ready to eat when you make it. The ingredients are very generous, especially the cheese. You can add as much as you want~Step 18
The color of the baking pan is so fresh, I really like it~~Step 19
The brushing effect is great~! Cooking tips for seasonal vegetable chicken curry baked riceI can’t quite remember how I fell in love with cooking. When I was in high school, I could light the dried noodles when I was cooking noodles. Later, after graduating from high school, I actually cooked mackerel stew for the first time because someone said that fish stew is more difficult than stir-frying. When I was in college, I would occasionally cook during my vacations at home. After I graduated, I had a lot of free time, and I could spend more time in the kitchen. Then before I knew it, cooking went from being dispensable to something I loved so much~
I used to be a home girl with no hobbies and no entertainment projects. Now, I am a home girl who likes to cook and bake~
I saw the signature of a bean fan before, saying that people with hobbies will shine. I don’t know if I have bling bling now, but this hobby at least alleviates the negative emotions caused by loss, anxiety, and sadness, just like a wall with mold stains that has been polished with sandpaper until it is shiny.
Falling in love with something is probably the same as falling in love with someone. It is an encounter and requires opportunity. During this free time, I originally just wanted to find something to do for myself before I walked into the kitchen, but it inexplicably developed into a great hobby. A thing you like is probably the same as a person you like. The change it leaves you is like the imprint a river brings to the mountains. The formation process is slow and silent, but the traces left behind in the end are indelible.
The first time I made baked rice, I was still in college. I used the rice my mother’s colleague brought back from Japan.curry cubes; there was no ceramic baking pan, so I used the large shallow square baking pan that comes with the oven; I had never even heard of mozzarella, so I used those breakfast cheese slices. Just thinking about it, I realized that the appearance of the finished product was very disappointing to the public, but my parents still happily praised me for doing a good job, and they ate a lot. Fast forward a few years, and now you can make your own curry sauce and delicious baked rice. Thanks to Touhou and IKEA, there are also beautiful baking pans of various types and shapes, and everything is ready.
Time is so wonderful, the cherries turn red and the bananas turn green, and it turns us into gentler and richer people. It’s great.
