Prepare the required ingredients.Step 2
Put all the ingredients except salt and butter into the bread machine bowl, start the kneading process for about ten minutes, and knead until the dough is torn apart and there are no granulated sugar particles.Step 3
Add butter and continue kneading for about seven minutes until the dough expands and a thin and elastic glove film can be easily pulled out.Step 4
Take out the dough and divide it into 3 equal parts. Knead each into a round shape and cover with plastic wrap to rest for about 5 minutes. The amount of the recipe is the amount of a 450g toast mold, ignore the amount I made.Step 5
Take a small piece of dough and roll it into a shape of beef tongue, press the bottom with your fingers to make it thin, and roll it up from one end.Step 6
After rolling out the rest of the dough, continue to cover with plastic wrap and let it rest for about five minutes.Step 7
Take a piece of relaxed dough and roll it out again, with the joint facing inward.Step 8
Roll the small dough joint inward, and the number of turns is about 2.5.Step 9
Put the prepared small dough into the toast mold, making sure that the dough rolls are in the same direction. As shown in the picture. Put it into the fermentation box and ferment at a temperature of 35° and a humidity of 75% for about an hour. If you don't have a fermentation box, you can put it in the oven at 36° for fermentation for about an hour. Place a bowl of warm water in the oven to maintain humidity.Step 10
Let the toast ferment until it is nine minutes full, as shown in the picture.Step 11
Lightly brush the surface of the toast with egg wash.Step 12

Put it in the preheated oven, set the upper heat to 150° and the lower heat to 225°, and bake for about 26 minutes.Step 14

I use whole wheat flour ground from my own wheat flour. You can also directly replace high-gluten flour and whole-wheat flour with whole-wheat bread flour.
