Yuebanwan stir-fried (mixed) noodles
Ingredients
- Water surface 2 taels
- Egg 1
- Green pepper 2 pieces
- Green Pumpkin 1 section
- Carrot 1 root
- Cabbage 2 leaves
- Sesame oil, soy sauce, chili oil, salt A little
- Green onions 1 seedling
Steps
1. Wash cabbage, green peppers, green onions, carrots and other ingredients and set aside
2. Cut green peppers and green onions diagonally into sections; cut carrots and cabbage into shreds; cut green pumpkin into 4-5 mm pieces (green pumpkin is soft and easy to break when cut into shreds, and has a slight thickness. When eaten after cooking, it is very soft, which can increase and enrich the taste of the entire dish)
3. While cutting vegetables, boil water until boiling
4. Under boiling water, because the noodles will be stir-fried later, you can turn off the heat nearly ten seconds after putting them in the pot; if you are mixing noodles, you can stay for two more seconds; if there are elderly and children, It is recommended to adjust the time appropriately according to taste preference.
5. Drain some sesame oil and set aside
6. Use an appropriate amount of cooking oil. When the green onions are ripe, add the white segments and green pepper slices; due to the thickness of the green pumpkin slices, it needs to be cooked early, so that the other ingredients will be immersed in a hint of sweetness throughout the process;
7. Stir-fry green peppers, scallions, and pumpkin slices until fragrant, add shredded carrots;
8. Continuously turn the carrot shreds (too thin and easy to stick to the pan - different food shapes will have different taste levels due to different additions at different times), so that the cooking oil can try to coat Shredded carrots (carrots are more nutritious and easier to absorb when cooked in oil)
9. Put the ingredients that are about to be fried aside, and add the evenly stirred egg liquid into the pot. After about 60% of it has solidified, you can flip it with the other ingredients. A little egg liquid that has not solidified also has a slightly different taste.
10. When all the ingredients are 8 or 9 minutes cooked, add the noodles that have just been drained and are ready for use. After turning them over briefly, add a small amount of pepper oil and salt, stir evenly and turn off the heat.
11. Load the plate. If your family's taste is not suitable for diners with heavy tastes, you can add some chili oil, chopped pickled peppers, and a few drops of soy sauce after loading...
12. Different containers for food will bring different dining experiences. There is a saying in Western food: "You first eat with your eyes". The general idea is that when you eat, your eyes are the first to taste.
13. Serve it on the table, with the warm orange juice you just made and the wild flowers and grass picked in the field - life needs a sense of ritual.
14. Come on, take a bite with your phone first!
