Crystal steamed dumplings
Ingredients
- Wheat starch 180g
- Potato starch 60g
- Purple Cabbage Juice 100g
- Wheat starch 90g
- Potato starch 30g
- Matcha powder 3g
- Boiling water 45 grams
- Pork 175g
- Prawn 100g
- Light soy sauce 2 spoons
- Salt Half spoon
- Oyster sauce 1 spoon
- Cooking wine 1 spoon
Steps
1. Prepare all the required ingredients and heat the purple cabbage juice.
2. Remove the fascia from the pork, slice it and chop it into minced meat.
3. Pick out the shrimp threads and peel the shells [it is easier to peel the shrimps if they are frozen]
4. Pat the shrimp with the back of a knife and chop into paste.
5. Put the meat filling and shrimp paste together, add seasonings and mix evenly.
6. Heat the purple cabbage juice and use chopsticks to mix the starch evenly while it is hot (180 grams of wheat starch, 60 grams of potato starch, weigh and mix well and then add the purple cabbage juice)
7. Mix 90 grams of wheat starch, 30 grams of potato starch, and 3 grams of matcha powder with boiling water and knead into a ball.
8. Shape into long round strips and cut into small pieces.
9. Roll it into a round dumpling wrapper shape and add shrimp filling.
10. Wrap pleated shapes in turn, do the same for the matcha flavored ones.
11. Add water to the pot, put on the steamer and heat to boil.
12. When the water is boiling, add the wrapped crystal dumplings, cover and steam for 8 minutes (the specific time depends on the size of the dumplings)
13. The dumpling skin made in this way is crystal clear and very delicious.
Tips
- It is more convenient to peel the prawns after freezing them for half an hour.
