Step 1
Wash the duck legs and chop into pieces.Step 2
Wash and slice green and red peppers, and slice ginger.Step 3
Pour water into the pot, add ginger slices, and bring the duck pieces to a boil over high heat. Remove and drain.Step 4
Pour a little oil into the pot and stir-fry the duck pieces.Step 5
Add star anise, cinnamon, ginger slices, dried chili peppers and scallions and continue to stir-fry.Step 6
Add light soy sauce, cooking wine, and a few drops of dark soy sauce and stir-fry until the duck meat changes color.Step 7
Pour in the beer, cover the pot, bring to a boil over high heat, then reduce to low heat and simmer.Step 8
When simmering until one-third of the beer remains, add salt to taste and continue to stir-fry for about three minutes.Step 9
Add green and red peppers and stir-fry until cooked, reduce juice and remove from pan.Step 10
