Braised Bean Noodles
Ingredients
- Fresh noodles 200g
- lentils 100g
- Meat slices 50g
- Onion and ginger 10g
- Light soy sauce 5g
- 老草 2g
- Sugar 5g
- Minced garlic 10g
Steps
1. Prepare ingredients: When slicing meat, cut fat and lean meat separately, cut onion and ginger into sections, mince garlic and set aside.
2. If the noodles are too long, cut them into lengths of about 20cm.
3. Cut the lentils into sections.
4. Heat the pan and add oil, first add the fat slices and stir-fry out the oil.
5. Add lentils and stir-fry over high heat.
6. Add onions, ginger and lean pork slices and continue to stir-fry evenly.
7. Continue to add sugar and cooking wine.
8. Add light soy sauce and dark soy sauce seasoning and stir-fry evenly.
9. Add warm water, more water can be used.
10. Pour out a bowl of soup and reserve it for later addition.
11. After the noodles are scattered and placed on the dish, do not flip them again.
12. Cover and simmer over medium-low heat for about 10 minutes.
13. You can pour the reserved soup in batches.
14. Mix the noodles well and reduce the soup. Finally, add minced garlic. You can also add a little sesame oil to enhance the fragrance.

Tips
- After adding the noodles, be careful not to stir them in the middle, otherwise they will stick easily. Stir them well after they are cooked.
