braised pork
Ingredients
- Pork belly 500g
- Rock sugar 20 pieces
- Onions 1 root
- Ginger 15g
- Eight anise 2 pcs
- Cinnamon 1 piece
- Dried chili 6 pieces
- Light soy sauce 1 spoon
- Salt 1 tablespoon
- Chicken essence 1 tablespoon
- Cooking wine 1 spoon
Steps
1. Prepare the skin-on pork belly, wash and cut into pieces
2. Add cooking wine to a pot of cold water and cook until the blood foams
3. Remove, clean and control water
4. Put pork belly in the pot without oil, fry over low heat to remove excess fat, then remove and set aside
5. Heat oil, add rock sugar and simmer over low heat
6. Boil until maroon red
7. Add pork belly and stir-fry until browned
8. Add light soy sauce and water to cover the pork belly
9. Add onion, ginger, cooking wine, star anise, cinnamon, and dried chili
10. Simmer for forty minutes, adding salt and chicken essence
11.Finally, the juice is reduced over high heat, and the braised pork is ready
