Braised Pork Ribs with Chestnuts
Ingredients
- Pork Ribs 300g
- Chestnuts (shelled) 330g
- Soy sauce 23g
- Cornstarch 5g
- Oil (for marinating spareribs) 5g
- 老草 2g
- Cooking wine 3g
- Oyster sauce 13g
- Granulated sugar 5g
- Garlic 16g
- Ginger 9g
- Oil (for frying pork ribs) 6g
Steps
1. What kind of chestnuts did I buy???? I didn’t ask... By the way, ask the store to help you use a machine to remove the shells
2. Soak the chestnuts in hot water, it will be easy to remove the clothes
3. Wash the ribs
4. Soak in edible water for 30 minutes to remove the blood
5. After soaking the ribs, drain the water, add soy sauce, dark soy sauce, corn starch, cooking wine, sugar, oil, and oyster sauce
6. Stir evenly and marinate for 1 hour
7. Turn it over after marinating for half an hour
8. Cut the garlic and ginger into thin slices
9. Medium heat, hot pan and cold oil
10. Use chopsticks to put the ribs into the pot without pouring the juice
11. Fry until golden brown and set aside
12. The marinated pork ribs are dripping with juice
13. Medium-high heat, hot pan and cold oil
14. Add ginger and garlic slices and saute until fragrant
15. Add chestnuts and stir-fry
16. Add water to cover the chestnuts, and pour in the marinated pork ribs
17. Cover and simmer for 25 minutes
18. Add the ribs
19. Simmer for 20 minutes to reduce the juice
Tips
- There is no need to collect the juice too dry
- The sauce for marinating the ribs is flavorful enough, so there is no need to add additional seasoning
