Braised spring bamboo shoots in oil
Ingredients
- Spring bamboo shoots (shelled) 300g
- Oil Appropriate amount
- Salt 1g
- Chives 1 root
- Light soy sauce 3g
- 老草 2g
- Sugar 2g
Steps
1. Peel off the shells of spring bamboo shoots, cut off the old roots and wash them thoroughly
2. Cut the bamboo shoots into small pieces
3. Blanch it in boiling water for 3 minutes and take it out
4. Place in cold water to cool down, then drain and set aside
5. Prepare chopped green onions
6. Heat the oil in a pan, add half of the chopped green onion and saute until fragrant
7. Pour in the prepared bamboo shoots and stir-fry for a while
8. Pour in light soy sauce, dark soy sauce and sugar and stir well
9. Pour in appropriate amount of water, cover and simmer for 5 minutes
10. Add salt (if it is salty enough, leave it out) and stir well
11. After the soup thickens, add the remaining chopped green onions and stir-fry evenly
12. Serve and enjoy
Tips
- 1. Fresh bamboo shoots contain oxalic acid and have a bitter taste. Blanching can remove the astringency
- 2. You need a little more oil to make this dish
