Ingredients

  • Spring bamboo shoots (shelled) 300g
  • Oil Appropriate amount
  • Salt 1g
  • Chives 1 root
  • Light soy sauce 3g
  • 老草 2g
  • Sugar 2g

Steps

1. Peel off the shells of spring bamboo shoots, cut off the old roots and wash them thoroughly

2. Cut the bamboo shoots into small pieces

3. Blanch it in boiling water for 3 minutes and take it out

4. Place in cold water to cool down, then drain and set aside

5. Prepare chopped green onions

6. Heat the oil in a pan, add half of the chopped green onion and saute until fragrant

8. Pour in light soy sauce, dark soy sauce and sugar and stir well

10. Add salt (if it is salty enough, leave it out) and stir well

Tips

  1. 1. Fresh bamboo shoots contain oxalic acid and have a bitter taste. Blanching can remove the astringency
