Step 1
1. The ratio of 50 grams of glutinous rice flour, 50 grams of sticky rice flour and 30 grams of rice flour, 45 grams of white sugar, 30 grams of milk powder, plus 5 grams of cocoa powder, placed in a bowl that can be steamed.Step 2
2. Add 200 grams of cool boiled water/mineral water. Note: I used milk powder to make 230 grams of milk. 30 grams of milk powder and 200 grams of water are enough.Step 3
3. Mix evenly with a whisk or chopsticks.Step 4
4. Add 30 grams of corn oil and continue to stir evenly.Step 5
5. After mixing evenly, the operation of the outer skin part is basically completed.Step 6
6. After the water boils, steam over high heat for 25 minutes. After steaming, take out and let cool.Step 7
7. After steaming, make a few cuts with a knife to facilitate heat dissipation.Step 8
8. After the heat on the surface has dissipated, turn the bottom out and continue to dissipate heat. This process takes a long time.Step 9
9. When the dough is no longer hot, knead it into a smooth dough, cover it with plastic wrap, and let it rest until the ice skin is ready!Step 10
10. Now to make the custard filling, 100 grams of butter is softened at room temperature. If you poke the butter with your hand like this, it will be in the right state.Step 11
11. Start the electric egg beater and beat until smooth.Step 12
12. Add 55 grams of white sugar and continue beating.Step 13
13. Beat the butter until it turns white.Step 14
14. And the volume becomes twice the original size, that’s it.Step 15
15. At this time start adding eggs, first add one egg.Step 16
16. Beat until completely mixed, as shown in the picture.Step 17
17. Add the second egg.Step 18
18. Beat and mix again.Step 19
19. Add the third egg.Step 20
20. Add the fourth egg.Step 21
21. After all four eggs have been added, mix until it becomes a thin liquid as shown in the picture.Step 22
22. Now, add the milk powder and starch powder, do not need to sift, just add them directly.Step 23
23. Use a hand mixer to mix evenly.Step 24
24. Mix it into a thicker milkshake shape as shown in the picture, and it’s almost ready.Step 25
25. Bring water to the steamer and steam for 5 minutes.Step 26
26. After 5 minutes, open the lid. The upper layer is steamed, but the lower layer is still thin, so use a spatula to turn it over and flip the lower layer of liquid to the top.Step 27
27. Steam for another 5 minutes to complete the custard filling. Use a spatula to cut the custard filling into a fluffy shape like this and let it cool.Step 28
28. When the custard filling is no longer hot, start weighing it.Step 29
29. 25One gram of custard filling should make 15 servings of filling.Step 30
30. Prepare some cake powder to prevent sticking. Cake powder is fried glutinous rice flour. Just put some glutinous rice flour in a non-stick pan without oil and stir-fry.Step 31
31. The ice skin is also 25 grams each. Remember to weigh it and divide it into 15 portions.Step 32
32. Put the ice skin into the cake flour and roll it around.Step 33
33. Spread out into a circle.Step 34
34. Wrap the custard filling.Step 35
35. Wrap it up with the seam facing down.Step 36
36. I used a 50g mold, 25g crust and 25g filling, and pressed out the shape with my favorite mooncake mold.Step 37
37. It doesn’t matter if you press hard.Step 38
38. Get a super cute bunny!Step 39
