Cloud milk buns
High-gluten flour 400g | Milk 250g |
Fine sugar 40g | Eggs 1 |
Yeast 5 grams | Salt 4 grams |
Step 1
Prepare ingredients. ➕Mold (28*28 square baking pan)Step 2
1⃣️One shot: Mix all ingredients together, knead into dough, cover with plastic wrap and ferment (ferment at room temperature for 1 hour or oven at 38 degrees for half an hour). Tips: ✨It is best to mix the yeast into the milk first and then pour it into the flour to avoid direct contact with salt and sugar✨ ✨The amount of sugar can be increased or decreased according to preference, and can be reduced to about 20g (not too sweet)✨ 2⃣️Second serve: After fermentation, take it out and press to deflate the dough. Divide it into 25 small uniform dough balls, knead them smooth and place them on a baking sheet. Ferment in the oven at 38 degrees for 1 hour (put a bowl of water to maintain humidity), ferment until doubled in size and stick together.Step 3
3⃣️Decoration: After taking it out, the surface can be decorated with dry powder: icing sugar or milk powder (sifted with a sieve), coconut or sesame seeds (sprinkled directly). It’s okay not to sprinkle it. 4⃣️Baking: Oven at 170 degrees for 20 minutes. Cover with tin foil if the surface is too dark. Take it out and let it cool.Step 4
