Step 1
Take 300 grams of flour, add 3 grams of salt, then slowly pour 180 grams of warm water into the flour, stir with chopsticks to combine the water and flour, and then use your hands to knead it into a dough (you don’t need to knead it for a long time, about five minutes), cover it and let it rise. After half an hour, take it out and make it into a smooth dough.Step 2
Roll the soft dough into long strips, then cut it into pieces, and roll the pieces into round dumplings (I forgot to take a picture of this step, the size of the dumplings is about 30g to 40g). Take a container, brush the bottom with oil, and put the dumplings in Put it into a container, spray oil on it, wrap it in plastic wrap and let it rise in the refrigerator for 2 hours or overnight.Step 3
Next, let’s prepare the meat filling. First chop the meat into minced meat with a meat grinder or by hand. The meat should be finer, then add cooking wine, light soy sauce, oyster sauce, salt, and minced ginger. (If you don’t like ginger, add ginger water.) Stir pepper, five-spice powder, MSG, and sugar clockwise until evenly mixed, then add green onions (a little more green onions, I don't like to eat green onions, so I added too little). Take out the dough as shown in the picture, flatten it with your palms, put the meat on it, cover it with another piece, and press the edge lightly to seal.Step 5
Seal the mouth and start to pull, pull slowly, don't use too much force, otherwise it will break. This step will test your patience for newbies. Pull until you are satisfied, take out the pan, spray oil on the hot pan, put the cake in and bake until the bottom is golden brown.
