Fried rice with ham, peas and eggs
Ingredients
- Overnight rice A bowl
- Ham 1 piece
- Carrot A small piece
- Peas A handful
- Eggs 1
- Scallions 1 tree
- Pepper A little
- Salt Appropriate amount
- Chicken essence A little
Steps
1. It is best to use leftover rice from overnight. Leave it in the refrigerator overnight to allow part of the water to evaporate. It is most suitable for making fried rice.
2. Peel fresh peas.
3. Boil water in a pot and blanch the peeled peas.
4. Cut the ham into dices.
5. Cut the carrots into small cubes and blanch them.
6. Cut the green onions into fine pieces.
7. Crack the eggs directly into the rice. If you want the fried rice to be more yellow, you can only use egg yolks.
8. Mix the rice and egg liquid evenly so that every grain of rice is evenly coated with egg liquid.
9. Pour oil into the wok. When the oil is hot, turn the wok so that the oil covers the bottom and sides of the wok. Then pour in the evenly mixed rice and stir-fry the rice over high heat. The fried rice in this way will have distinct grains, not sticky, and every grain of rice will be golden brown.
10. After the rice is fried into pieces, add diced ham.
11. Add diced carrots.
12. Add appropriate amount of salt according to personal taste.
13. Add blanched peas.
14. Add a little pepper.
15. Add shallots, stir-fry a few times quickly and serve.
16. A bowl of egg fried rice with clear grains is ready.
Tips
- It is best to use leftover rice that has been refrigerated overnight. Crack the eggs directly into the rice. If you want the fried rice to be more yellow, you can only use egg yolks. Use high heat when frying rice, and it is best to blanch carrots and peas in advance.
