Step 1
Prepare the required ingredients. Soak the mushrooms in warm water and slice them into slices. Dried fungus, soaked in warm water. Soak daylily/day lily in warm water and cut off the hard part of the root. Chinese cabbage, cut into approximately 5cm segments. Soak dried yuba in warm water and cut into approximately 5 cm sections.Step 2
Soak the vermicelli in warm water, drain and cut it from the middle. Cut the garlic sprouts into about 5 cm sections, and use the white rhizomes separately from the green leaves.Step 3
Take a large wok and heat it over medium heat. Add oil and ginger slices. gingerHeat the slices in the pan for about 30 seconds, do not burn them. Add the red fermented bean curd and use a spatula to spread it.Step 4
Add garlic slices, white rhizomes of garlic sprouts, mushrooms, fungus and day lily (daylily). Stir fry for 1 minute. Add Shaoxing wine (optional) and sauté for another minute.Step 5
Add Chinese cabbage, tofu puffs and yuba. Increase the heat and stir-fry for 2 minutes. Add the green leaves of the garlic sprouts, sesame oil, light soy sauce, sugar and water or vegetable stock. Stir well and cover the pot, then increase the heat to medium. Simmer for 6 minutes, stirring in between.Step 6
Uncover the pot and turn to high heat to reduce the juice. Test the saltiness and add vermicelli, which will absorb most of the water. Continue to stir-fry until the juice is completely reduced.Step 7
