Hot and sour pea jelly
Ingredients
- Pea jelly material:
- Pea flour 210g
- Cold water 500ML (for mixing pea flour)
- Cold water 500ML (for cooked pea flour)
- Salt 2 grams
- Hot and sour pea jelly ingredients:
- Pea jelly 500g
- Little red pepper 3 pieces
- Scallions A little
- Garlic 2 cloves
- Sesame oil 1 spoon
- Salt Appropriate amount
- Light soy sauce 2 spoons
- Vinegar 2 spoons
- Sugar 1 spoon
- Ginger Oil A spoonful
- Black bean chili sauce 1 spoon
Steps
1. Mix pea flour with 500ML cold water and mix thoroughly
2. Sieve it once to remove any lumps of powder that have not melted. You can also grind it with a spoon to fully melt the lumps.
4. Turn the pot to low heat, pour the prepared pea flour slurry into it, and stir continuously until it becomes thick and thick, then turn off the heat.
5. Pour the cooked pea flour paste into a container and wait until it cools down to make pea jelly.
6. Cut the pea jelly into strips or small cubes and set aside in a container.
7. Chop the small red pepper, green onion and garlic into mince.
8. Mix all seasonings into sauce.
9. Add the red pepper and minced garlic and mix well. Pour the sauce on the chopped pea jelly, sprinkle with minced green onion and serve.
Tips
- Pea flour and wood ginger oil can be purchased at Yunnan specialty stores.
- The seasoning of pea jelly can also be adjusted to suit your own taste.
- If you don’t like to eat it cold, this pea jelly can also be eaten hot. Just stir-fry the pea jelly with the same seasoning.
- Mujiang seed oil is not a necessary seasoning. If it is not available, you can omit it, or use mustard oil or peppercorn oil instead.
