Hot and sour wontons
Ingredients
- Parsley core 200g
- Pork 250g
- Ginger A few slices
- Scallions 2 roots
- Eggs 1
- Fuel consumption 10 grams
- Light soy sauce 10g
- Salt 3 grams
- Zanthoxylum bungeanum powder 2 grams
- Thirteen Incense 2 grams
- White pepper A small amount
- Chicken essence 1g
- Sesame Oil 3g
- Chili noodles 10g

- Vinegar 5 grams

- Wonton wrappers 50 sheets

Steps
1. Prepare the celery core and chop it into pieces for later use. Cut the ginger and garlic into minced pieces and put them into a basin.
2. Put the meat filling into a basin.
3. Add salt, oyster sauce, light soy sauce, pepper powder, thirteen spices, eggs, and chicken essence.
4. Stir the meat filling clockwise and set aside.
5. Prepare wonton wrappers and a bowl of water.
6. Place the meat filling in the middle of the wonton wrappers, and wipe a circle of water around the wonton wrappers.
7. Fold the dough in half and pinch tightly.
8. Pinch the two corners tightly, and the Yuanbao wontons are ready. (The wonton skin I bought was a bit soft, so the ingots were a bit soft)
9. A plate of fat Yuanbao wontons is ready.
10. Prepare the chili noodles and put them in a bowl.
11. Boil the oil in a pot and pour in the chili noodles.
12. Stir the chili noodles, and the fragrant spicy oil is ready.
13. Take a bowl and put the chopped onions, garlic and coriander intoIn the bowl.
14. Add oyster sauce, light soy sauce, vinegar and sesame oil, stir evenly to make the base.
15. Put the base ingredients into a large bowl.
16. Add another spoonful of spicy oil.
17. Boil water in a pot, add wontons, and stir gently clockwise.
18. Cook for about 3-4 minutes, and the large wontons will be ready.
19. Put the wontons into a bowl and stir evenly. The red chili oil and coriander and green onions will float up. The color is very beautiful!
20. Take a bite, the sour and spicy taste is amazing!
Tips
- The wonton wrappers I bought are a bit thin, and the cook likes to make wontons with large fillings, which are comparable to the size of dumpling fillings. Pour some water around them. Avoid showing off your stuff.
- The fried spicy seeds can be put separately into the base. Even the elderly and children who cannot eat will not be affected. For reference!
- The parsley core I used is very tender and tastes very good. It tastes much better than parsley. Friends can try it.
