Lemon Basque Cake

Egg yolk 1 | White sugar 50g |
cream cheese 250g | Light cream 120g |

Step 1
Wash 1 lemon with salt water and dry it. Use a peeling knife to remove the lemon zest and set aside.Step 2
Cut the peeled lemon in half and squeeze out the juice.Step 3
2 eggs + 1 egg yolk + 50g sugar, stir well with egg beaterStep 4
Use a silicone knife to press 250g of room temperature softened cream cheese until smooth.Step 5
Add the egg liquid into the cheese paste several times and mix wellStep 6
Pour in 120g of whipped cream and mix wellStep 7
Sift in 15g corn starch and mix wellStep 8
Finally, add lemon zest + 10g lemon juice and mix wellStep 9
Pour the batter into 2 4-inch molds lined with greased paper. Heat the oven from top to bottom at the middle level at 200° for 30 minutes. After taking it out of the oven, let it cool down and refrigerate it overnight.Step 10
