Step 1
The crucian carp is killed at the market and cleaned at home. Add Huadiao wine and spread evenly inside and out, cut green onions into thick strips, and marinate with the crucian carp. After 10 minutes, discard the shredded green onions and pour off the excess water.Step 2

Dice the soaked ginger, red pepper, and cowpea, and mince the garlic. Heat oil in a pot, maybe a little more oil, stir-fry the pickled ginger, pickled peppers, soaked cowpeas, half of the minced garlic, and Sichuan peppercorns until fragrant.Step 4
