Steps

2. Use a smaller fruit knife to deal with the damaged and uncleaned areas of the pineapple, and then rinse them with clean water.
3. Cut four times horizontally and vertically along the pineapple core to remove the core. Cut the pineapple into thin slices
4. Cut the slices into small dices. The size depends on your favorite taste. If you like it grainy, you can cut it into larger pieces. Instead, chop it into fine pieces.
5. Put 2/3 of the diced pineapple into a large bowl, add fine sugar, stir, and marinate for about two hours
6. You don’t need to chop the other 1/3 of the pineapple too finely, just put it into a food processor or a crusher to make a puree
7. There is no need to add water or sugar in this step, just beat the pineapple directly. As shown in the picture, it will look like rice paste after beating
8. After two hours, the pineapple has already juiced out of the soup. This step can maximize the juice and neutralize part of the sour taste
9. Pour the puree and pineapple cubes into the pot, turn to low heat and cook
10. Add a few more rock sugars. You don’t need to put too much because maltose will be added later.
11. Keep cooking over low heat, stirring while cooking to prevent sticking
12. After cooking for about 8-10 minutes, the water content will be reduced by more than half. At this time, when you scoop a spoonful of it, you will notice it is wet and the water is dispersed
13. At this time, you can pour in a little maltose and continue to cook over low heat. Taste it yourself, if it's sour add sugar, if it's sweet add lemon juice. Until the sweetness suits you
14. In the end, there is almost no water in the pot. Even if you take a spoonful, the water will not drop, and it will be better if it is more clumped. But don't cook it too dry, otherwise it will become pineapple filling.
15. Turn off the heat, put it into a bottle that has been sterilized with hot water while it is hot, let it cool and then eat
