Ingredients

Steps
1. Open the belly of the old hen and clean its internal organs. This old hen is relatively large, so I used half of it and put the other half in the refrigerator.
2. Put vinegar, salt and flour in the pork belly.
3. Rub and wash with your hands repeatedly to remove the white lard on the pork belly. After rubbing, rinse with running water, then add vinegar, salt, and flour and repeat the last action. I have a total of Washed three times.
4. The washed pork belly is white and has no fishy smell.
5. Put the pork belly into the pot, add the peppercorns, green onions and ginger and blanch for three minutes, take it out and rinse it under running water.
6. Chop the chicken into large pieces and stuff it into the pig's belly.
7. Fix the opening with a toothpick.
8. Put the pork belly into a casserole, add an appropriate amount of water, and bring to a boil over high heat the onion, ginger, and cooking wine. The pork belly is almost covered.
9. Cover the lid and reduce the heat to minimum and simmer.
10. After stewing for about two hours, turn off the heat and add edible salt, then cover the lid and continue to simmer for another 20 minutes using the heat retention of the casserole. Take out the pork belly.
11. Cut the pork belly and take out the chicken.
12. Cut the pork belly into strips.
13. Load the plate,If it's a little cold, you can put the pork belly and chicken back into the casserole and boil again.
14. Sprinkle with chopped green onion and the aroma will be fragrant.

Tips
- 1. No matter how good the casserole is, it needs maintenance. Used casseroles should be cleaned in time and placed in a ventilation truck to dry thoroughly. It is not recommended to put it in a sealed cupboard.
