Steps
1. First process the crayfish, cut off the head of the crayfish, then remove the intestines, pinch the tail piece in the middle of the lobster tail with your hands, twist it up and down and pull out the intestines. Just came out.
2. Then wash the crayfish with water, scrub the crayfish with a brush while rinsing, drain the water and set aside.
3. Start peeling the garlic. If you like the smell of garlic, you can peel more garlic. Then wash and cut the green onions, wash, peel and slice the ginger.
4. Wash the coriander, remove the roots and cut into small sections.
5. Prepare Sichuan Spicy Crayfish Seasoning.
6. Pour an appropriate amount of corn oil into the pot, heat it to 180-200 degrees, put the crayfish into the pot and deep-fry it. If the surface color of the crayfish changes slightly, take it out of the pot and set aside.

10. Then add an appropriate amount of beer, cover the pot, bring to a boil over high heat, then turn to medium heat and simmer for about 15-20 minutes.
11. When there is still a little soup left, sprinkle in a little chicken essence and stir-fry well before serving.
12. Put the prepared spicy crayfish on a plate.
