Spicy Dried Tofu and Stir-fried Shredded Pork
Ingredients
- Lean meat Three ounces
- Cooking wine A spoonful
- Starch Appropriate amount
- Liaodai A small amount
- young ginger One

Steps
1. Wash the lean meat and cut into large pieces, then cut into shreds.
2. Add cooking wine, dark soy sauce and starch, a little water and mix well to taste.
3. Cut the dried tofu into thin strips, cut the green chili into diagonal strips, cut the young ginger into shreds, and slice the garlic and set aside. (Young ginger is very crispy. If it is difficult to buy, you can use shredded old ginger instead.)
4. Chop the bean paste into fine pieces.
5. Pour an appropriate amount of oil into the pot and heat it up, add the shredded pork, spread it out with a spatula and stir-fry for two minutes. As shown in the picture.
6. Add bean paste and stir-fry until fragrant and colored. As shown in the picture.
7. Add chili shreds, young ginger shreds and garlic slices and dried Sichuan peppercorns.
8. Stir-fry together until fragrant and garnish with vegetables.
9. As shown in the picture, stir-fry until the peppers and young ginger are broken.
10. Finally add the dried tofu.
11. Stir-fry evenly for about a minute.
12. Add appropriate amount of salt and a small amount of chicken essence.
