Super soft cotton cake
Ingredients
- Eggs 4
- Xinliang Velvet Cake Flour 50g
- Milk 50g
- Corn oil 40g
- Fine sugar 40g
- Lemon juice Appropriate amount
Steps
1. Add corn oil to a non-stick pan and heat over low heat until slightly boiling.
2. Immediately remove from the heat, add flour and stir quickly to form a smooth hot dough, put it into another basin and set aside.
3. Preheat the oven to 150 degrees. Beat 3 egg yolks and 1 whole egg in a bowl.
4. Use a manual egg beater to stir evenly, then add milk and mix evenly.
5. Add the mixed egg yolk liquid into the flour batter in two batches. After mixing once, add another.
6. The mixed egg yolk paste is in a fluid state.
7. Add lemon juice to the egg whites, and use an electric egg beater to beat into rough foam.
8. Add the fine sugar to the egg whites in three batches and beat until there are small hooks.
9. Add one-third of the whipped meringue into the egg yolk batter.
10. Use a spatula to mix evenly, then pour it back into the remaining meringue, and use the same technique to mix evenly.
11. Pour the mixed cake batter into an 18CM square mold lined with oil paper. Shake the baking pan to pop out any large air bubbles in the cake batter.
12. Fill the baking pan with hot water and place it on the bottom layer of the Dongling oven. Place the mold on the grill and place it on the second to last layer. Bake for 50 minutes.
13. Do not turn the baked cake upside down, just let it cool and slice it.
