Sweet and Salty Shaobing

Step 1
Use the bread machine to knead the dough into a ball, turn off the power, cover with a damp towel and let it rest for 30 minutes.Step 2
Divide the dough into 2 portions and make salty and sweet flavors respectively.Step 3
Mix salt, pepper powder, sesame paste and water into a paste and set aside.Step 4
I made 5 pieces of dough, rolled it into a long strip, brushed it with salt and pepper paste, sprinkled with a few chopped green onions, and rolled it up.Step 5
Then flatten it into a round shape, brush it with soy sauce water (2:1 soy sauce and water), and sprinkle with white sesame seeds.Step 6
Baking is different from usual. The baking pan should be preheated to 250 degrees before taking it out. Wet both sides of the pancake with water and put it directly into the baking pan. Spray some water on the surface before baking. It will be baked at 250 degrees for 10 minutes. .Step 7
For sweetness, you can just wrap it in sugar. I used the leftovers from making sugar packets before.Step 8
Wrap the same 5 portions in sugar and roll them into oval shapes. Brush them with soy sauce and sprinkle with sesame seeds. Moisten both sides with water and place into the preheated baking pan. Spray water into the oven as above. You can also place a baking cloth on a preheated baking sheet for baking, but it is not as good as placing it directly on the baking sheet because the bottom will not be crispy after using a baking cloth.Step 9
This is baked directly on the baking pan. It is the same as the sesame seed cakes sold outside. It is very crispy, but it is more hygienic than outside.Step 10
