Steps
1. Prepare the required ingredients
2. Soak the crushed white fungus in water for about 20 minutes
3. Wash the scallions and cut into chopped green onions
4. After soaking the white fungus, rinse it with water
5. Beat the eggs
6. Put the washed white fungus into the egg liquid
7. Add chopped green onion
8. Add salt
9. White pepper
10. Stir evenly and set aside
11. Pour corn oil into the pot and turn on medium heat
12. Heat the oil until it is about 70% hot, pour in the white fungus and egg liquid, and fry for a while without turning it
13. When the bottom surface is almost solidified, stir-fry until the eggs are fully mature

- 1. The water for soaking white fungus can be warm water or cold water. I used cold water
- 2. Adding pepper to the egg liquid can remove the fishy smell and increase the aroma
- 3. Chives have a stronger aroma than green onions
