White pear cartoon cake
Ingredients
- Low gluten flour 40g
- Eggs 2
- Corn oil 20g
- White sugar 30g
- Lemon juice A few drops
- White Pear Juice 40g 40g

Steps
1. Weigh the ingredients separately and set aside.
2. Peel and core the white pear, squeeze the pulp and set aside.
3. The basin should be clean, free of water and oil, and be careful to separate the egg whites and egg yolks.
4. Divide 4 grams of 30 grams of white sugar into the egg yolks and add salt. Stir well and add corn oil.
5. Add white pear juice.
6. Continue to stir evenly and sift in low-gluten flour.
7. Stir in a "Z" shape until there are no particles.
8. Preheat the oven first: 140 degrees upper and 130 degrees lower. Add a few drops of lemon juice to the egg whites. Add the remaining 26 grams of powdered sugar (add in three times) first use an electric whisk to beat the fish until it becomes frothy and add a small portion.
9. After a few rounds, join again. Add the remaining powdered sugar for the last time and continue beating at high speed. Lift the egg beater and observe the state of the egg whites: it should be completely upright and pointed.
10. Pour half of the beaten egg whites into the egg yolk batter.
11. Stir in a "J" shape and do not make circles to avoid defoaming. Stir evenly and pour into the remaining egg whites. Continue to stir evenly.
12. Pour the mixed batter into the mold, press it a few times on the countertop to remove large bubbles, and use a bamboo skewer to make a "Z" shape to cut out the small bubbles. (If there is excess, pour it into a paper cup and bake it together.)
13. After the oven is preheated: place the middle layer in the oven at 140 degrees for upper and 130 degrees for lower, and bake for 60 minutes.
14. There is no need to turn it upside down when it comes out of the oven. After it cools down, you can press it a few times to release it from the mold.

Tips
- The temperature of each oven is different, please adjust accordingly. Due to the freshness of the eggs, the amount of egg whites will be slightly different when beating the egg whites.
