Zucchini Nourishing Laohuo Soup
Ingredients
- Zigua (hairy melon) 1 piece
- Carrot 1
- Shiitake mushrooms 5 pcs
- Meibou A handful
- Ginger A piece
- Cashew nuts A small handful
- Peanuts A small handful
- Candied dates 2 pcs
Steps
1. Clean the hairy melon.
2. The best way to peel melon is to use a spoon instead of a paring knife!
3. Use a spoon to scrape off the green skin on the surface of the melon.
4. Wash it after shaving.
5. Cut the melon into pieces and set aside.
6. Wash 1-2 carrots (depending on the size, this one is small, just two).
7. Peel with a paring knife.
8. Peel the carrots into hob pieces.
9. Wash and soak 2 liang of eyebrow beans for more than 3 hours in advance.
10. Wash 5 shiitake mushrooms. The roots of shiitake mushrooms are good. Wash them and set aside for later use. Do not discard them.
11. Cut the mushrooms into small pieces.
12. Peel and slice the ginger.
13. Wash and soak peanuts for later use.
14. Two candied dates, washed and set aside.
15. Wash a few cashew nuts and set aside.
16. Boil a pot of water. After the water boils for 5 minutes, add all the ingredients. After the fire boils, turn to low heat and cook for 1.5 hours.
17. Season with salt and pepper to taste and serve while hot.
