Ingredients
- Low gluten flour 90g
- Odorless vegetable oil 70g
- Eggs (mine are smaller) Seven
- Milk 60g
- Sugar 70g
- Green juice 8g
- Milk powder 10g
- Salt 1 gram
- Lemon juice A few drops
Steps
1. Prepare all materials.
2. Weigh and sift low-gluten flour, green juice, and milk powder
3. To separate egg whites and egg yolks, the basin for egg whites must be free of oil and water.
4. This cake is made using the water bath method. Make preparations in advance. Don’t worry about the paper box in the mold as it will not burn in the oven.
5. Use an induction cooker to heat the vegetable oil. If there are oil ripples, remove from the heat, about 70 degrees. If the oil temperature is too high, the flour will form lumps, so be careful not to make the oil temperature too high here.
6. Pour sifted low-gluten flour, milk powder, and green juice into the heated oil
7. The reproduction is uniform with no particles.
8. Add milk and continue to stir.
9. Add egg yolk and continue to stir.
10. When the batter is in the state, use a spatula to lift it into a ribbon state, then slowly drop it to the ground.
11. Add 1 gram of salt and a few drops of lemon juice to the egg whites.
12. Use a whisk to beat at medium speed.
13. Beat until foamy and add sugar for the first time. Continue to beat until texture appears and add the remaining sugar for the second time.
14. Beat until wet peaks form and the egg whites are very fine.
15. Divide one-third of the egg whites into the egg yolk batter and mix evenly.
16. Pour all the mixed egg yolk paste into the egg whites.
17. Reprint evenly.
18. Slowly pour the mixed batter into the mold from a high height.
19. The oven must be preheated in advance. Pour cold water into the baking pan and place the cake mold. Oven settingsLower the heat to 150 degrees and bake for 60 minutes.
20. After taking it out of the oven, gently shake it twice to release the heat to avoid shrinkage. Then tear off the surrounding oil paper and place it on the grill to dissipate heat. Cool and cut into pieces.

Tips
- The ancient cake uses the water bath method, and a square 8-inch mold is used. Baking paper needs to be placed in the mold. If the height of the mold is not enough, It is necessary to add cardboard inside the mold and outside the oil paper to help the cake rise.
