How to make chestnut rolls

Step 1

Let’s take a family photo first.

Step 2

1. Separate all the egg whites and yolks of 4 eggs into two water-free containers. 2. Add the egg yolks to the sugar and beat with a manual egg beater. 3. Then add corn oil and milk. 4. Finally, sift in the flour and stir until thick and grain-free.

Step 3

1. Add a small amount of baking powder to the egg whites for easier whipping. 2. Use an electric egg mixer to beat until the fish looks like bubbles. 3. Add sugar in three batches and beat until stiff peaks form.

Step 4

1. Sift cocoa powder into the egg yolk paste and stir in 8 figures. 2. Pour the egg white paste into the container containing the egg yolk paste three times. Do not stir. Flip the egg yolk paste from bottom to top from the bottom of the basin to fully incorporate it. 3. Preheat the oven to 180℃

Step 5

Line a baking sheet with oiled paper, pour the batter evenly, shake it from side to side to release air bubbles, and bake for 20 minutes. At this point you can make the filling. 1. Peel about six ripe chestnuts, pour in a little milk and mash them into puree with a blender. 2. Mix the chestnut paste and light cream, add 15 grams of sugar, and beat thoroughly until the cream is whipped. Set aside. Place new parchment paper on the table, quickly invert the baked cake onto the parchment paper, and then remove the previous piece of parchment paper. Wait until the temperature has cooled down slightly and it is not hot to the touch. Pick up both sides (wide) of the oil paper and roll the cake up loosely without using too much force. Put it in the refrigerator for 20 minutes.

Step 6

Take out the shaped cake roll, gently open it, add chestnut cream and smooth it out, then roll it up. The final slice is complete. Chestnut roll cooking tips

When beating egg whites, add some white vinegar or baking powder, otherwise it will be difficult to beat.
