Step 1

The processing of fresh pork belly is similar to the processing of fat intestines in my previous recipe. Various impurities such as edge oil are removed, and the inner layer must be turned over and washed. After the first round of cleaning, add high-strength white wine, salt, vinegar, dry starch, and oil and rub repeatedly. The purpose of this step is to remove the smell of the pork belly, and it is also very effective in removing suspended solids on the surface of the pork belly. Step 2

Add water to the pot, add cold water to the pork belly, boil over high heat for two minutes, remove the adherents, change the water and cook again, add dried orange peels, ginger slices, and Sichuan peppercorns, and continue to cook the pork belly over medium heat. Pork belly must be cooked just right. What is just right means that it is cooked just right but not too soft. How to identify? Take a chopstick and insert it. If it can just pass through and the pork belly is still relatively firm, it means it is cooked. Step 3

Let the cooked pork belly cool naturally. It is best to cover it with gauze or a mesh cover. If it is not eaten immediately, put it in a fresh-keeping bag and store it in the refrigerator as soon as possible after cooling. If the cooked pork belly is stored at natural temperature for a long time, the skin will easily turn black and dry, which will affect the taste. Step 4

Because I also made tomato-fried cauliflower today, while waiting for the pork belly to cool down, I made a tomato rose to serve on the plate. Peel the raw tomatoes in a circle like peeling an apple, and then form a circle naturally, then cut two slices of green lemon, and garnish with some mint leaves. Step 5

Step 7

Prepare dipping seasonings: self-refined chili oil, self-refined Sichuan peppercorn oil, minced garlic, minced ginger, light soy sauce, sugar, sesame oil, Sichuan peppercorn powder, monosodium glutamate, cold vinegar, chopped green onion.
