Durian mousse cake
Cake body | Eggs 2 |
Milk 30ml | Cake flour 30g |

Mousse body | Durian Half durian meat (according to personal preference) |
Milk 400ml | Light cream 250g |
Powdered sugar 20 grams (you can add more if you like it sweet) | Gelatin 20 grams |
Step 1
When the cake body is ready, it will be an ordinary chiffon cake. You can also use digestive biscuits or crushed Oreos and butter to make the base of the cake.Step 2
Peel the durian meat from the shell and pour it into the wall breaking machine together with milk and sugar. I use the sauce button to grind it, no heating is required.Step 3
Soften gelatine sheets in ice water, then heat over water to melt.Step 4
After grinding the milk, white sugar and durian, pour in the light cream (no need to whip) and add it to the wall breaker to beat evenly. Then add the softened gelatine liquid and beat evenly.Step 5
Put the cake base in place, pour the whipped durian paste into the mold, smooth it out, and put it in the refrigerator for more than 4 hours.Step 6
