Large stuffed wontons
Ingredients
- Meat filling 130g
- Celery leaves 50g
- Ginger water 10g
- Sesame oil 5g
- 老草 2g
- Oyster sauce 2g
- Onion leaves 6g
- Salt 3g
- Chicken Essence 2g
- Wonton wrappers 260g
Steps
1. Prepare the meat filling.
2. Add ginger water and knead evenly so that the meat filling can completely absorb the ginger water.
3. Add sesame oil, dark soy sauce and oyster sauce and stir evenly.
4. Add minced green onion leaves and stir evenly to marinate the meat filling.
5. Wash the celery leaves, blanch them, remove excess water and chop into small pieces.
6. Add to the meat filling, add salt and chicken essence and mix evenly.
7. The wonton filling is ready.
8. Take a wonton wrapper and put the meat filling on it, fold the wonton wrapper in half, and use the thumbs and index fingers of both hands to squeeze the filling area to make the wonton fillings stick together.
9. Then fold the two ends back and pinch tightly (you can put some water on it if it is not sticky), and a wonton will be wrapped.
10. Wrap all the wontons in sequence.
11. Take a bowl, add seaweed and dried shrimps, and add light soy sauce, salt, chicken essence and sesame oil according to your own taste.
12. After the wontons are put into the pot and cooked, first scoop a spoonful of wonton soup into a bowl and prepare the wonton soup.
13. Pour in the cooked wontons and sprinkle with coriander (if you like spicy food, you can add a little red oil).
14. Stir evenly, and a bowl of fragrant wontons with large fillings is completed.

Tips
- Adjust the soup according to your own taste. You can also use chicken broth or bone broth as the soup base.
