Winter Melon Braised Pork
Pork belly 1 block | Onions 3 roots |
Ginger 1 block | dried chili 2 |
Zanthoxylum bungeanum 5 capsules | Star anise 2 |
Cinnamon 1 block | Fragrant leaves 2 tablets |
Light soy sauce 1 tablespoon | Old soy sauce A little |
Oyster sauce 1 scoop | Yellow Rock Sugar 1 small block |

Step 1
Cut the pork belly into small pieces, put the onion and ginger in a pot under cold water, blanch it in cooking wine for about 3 minutes, wash it with warm water, drain it and set aside! (I used pork belly to save time. I bought it the night before and blanch it in water, put it in the refrigerator to store, and cook it directly the next day!)Step 2
Heat oil in a pan, add onions, ginger, dried chilies, Sichuan peppercorns, star anise, cinnamon, and bay leaves and stir-fry over low heat until fragrant!Step 3
Add the blanched pork belly and stir-fry until it changes color and is slightly charred!Step 4
Add a spoonful of light soy sauce, a little dark soy sauce, and a spoonful of oyster sauce! Stir fry evenly!Step 5
Add a piece of yellow rock sugar for freshness! Add color!Step 6
Pour in the right amount of boiling water! (The boiling water must completely cover the pork belly!)Step 7
After the fire comes to a boil, open the pot and simmer for about 5 minutes to dissipate the fishy smell. Then cover the lid and simmer over low heat for an hour!Step 8
While the braised pork is stewing, peel the winter melon, remove the pulp, clean it, and cut it into small pieces for later use!Step 9
Stew the braised pork until tender and that’s it!Step 10
Add appropriate amounts of salt, pepper and chicken essence to taste!Step 11
Add in the sliced winter melon!Step 12
Continue simmering for about 10 minutes!Step 13
After the winter melon tastes good, pick out the aniseed ingredients and throw them away!Step 14
Add an appropriate amount of chopped green onions and stir-fry evenly!Step 15
